Ingredients
- Spaghetti squash, 1 large
- Olive oil, 2 tablespoons (30 ml)
- Salt, 1/2 teaspoon (2.5 g)
- Black pepper, 1/4 teaspoon (1.25 g)
- Fresh spinach, 4 cups (120 g)
- Garlic, 4 cloves, minced
- Cream cheese, 4 ounces (115 g)
- Mozzarella cheese, 1 cup, shredded (100 g)
- Plant-based cheese, 1/2 cup, grated (50 g)
- Dried Italian herb blend, 1 teaspoon (5 g)
- Plant-based milk, 1/4 cup (60 ml)
- Red pepper flakes, 1/4 teaspoon (optional) (1.25 g)
- Fresh parsley, 2 tablespoons, chopped (8 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Brush the cut sides of the squash with 1 tablespoon of olive oil.
- Season the squash with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.
- Place the squash halves cut side down on a baking sheet.
- Roast in the oven for 35-40 minutes, until the flesh is tender.
- While the squash is roasting, heat the remaining 1 tablespoon of olive oil in a pan over medium heat.
- Add the minced garlic to the pan and sauté for 1-2 minutes until fragrant.
- Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes.
- Reduce the heat to low and add the cream cheese, stirring until melted and smooth.
- Stir in the mozzarella and Parmesan cheeses until well combined.
- Add the dried Italian herb blend, remaining 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Pour in the milk and stir until the mixture is creamy.
- If using, add the red pepper flakes and stir to combine.
- Remove the pan from heat and set aside.
- Once the squash is done, remove it from the oven and let it cool slightly.
- Use a fork to scrape the squash flesh into strands, leaving the shells intact.
- Add the squash strands to the cheese and spinach mixture, and stir until well combined.
- Spoon the mixture back into the squash shells.
- Return the stuffed squash halves to the oven and bake for an additional 10 minutes.
- Remove from the oven and garnish with chopped fresh parsley.
- Serve hot and enjoy!
