Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent.
- Add cherry tomatoes and cook until they begin to soften.

- Add spinach or kale and let cook for another 5 minutes until greens are wilted.
