  • 3 cups cooked shredded chicken
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup diced green chiles
  • 1/4 cup chopped fresh cilantro
  • 1 small onion, diced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup room temperature sour cream
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large saucepan over medium heat.
  2. Create the roux by whisking in the flour cook for about one minute.
  3. Add the chicken broth gradually while whisking.
  4. Incorporate the sour cream, cumin, salt, and pepper into the sauce.
  5. Mix the filling in a bowl with chicken, onion, green chiles, cilantro, and 1 cup of cheese.
  6. Assemble the enchiladas with chicken mixture in the tortillas and place in a baking dish.
  7. Top the rolled tortillas with remaining white sauce and cheeses.
  8. Bake uncovered at 350°F for 25-30 minutes.
  9. Serve after letting them rest for 5 minutes.

Notes

Use rotisserie chicken for convenience and flavor. Feel free to customize the cheese and add vegetables for extra nutrition.
