- 8–10 medium flour tortillas
- 3 cups cooked shredded chicken
- 2 cups shredded Monterey Jack cheese, divided
- 1 cup shredded cheddar cheese, divided
- 1/2 cup diced green chiles
- 1/4 cup chopped fresh cilantro
- 1 small onion, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup room temperature sour cream
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Melt the butter in a large saucepan over medium heat.
- Create the roux by whisking in the flour cook for about one minute.
- Add the chicken broth gradually while whisking.
- Incorporate the sour cream, cumin, salt, and pepper into the sauce.
- Mix the filling in a bowl with chicken, onion, green chiles, cilantro, and 1 cup of cheese.
- Assemble the enchiladas with chicken mixture in the tortillas and place in a baking dish.
- Top the rolled tortillas with remaining white sauce and cheeses.
- Bake uncovered at 350°F for 25-30 minutes.
- Serve after letting them rest for 5 minutes.
Notes
Use rotisserie chicken for convenience and flavor. Feel free to customize the cheese and add vegetables for extra nutrition.
