  • 1 tablespoon (15 ml) Sriracha sauce
  • 1/2 teaspoon (3 ml) Kosher salt to taste
  • 1/4 teaspoon (1 ml) black pepper to taste
  • Toothpicks for securing, optional

Instructions

  1. Preheat your oven to 425°F (200°C). Prepare a baking tray by covering it with parchment paper or aluminum foil to simplify cleaning.
  2. Wash the Brussels sprouts, trimming away any yellow leaves. Dry them thoroughly with a paper towel.
  3. Put the Brussels sprouts into a mixing bowl. Add a drizzle of olive oil and season with a pinch of salt and a sprinkle of black pepper. Stir until they’re evenly coated.
  4. Wrap each Brussels sprout with a half slice of beef, using toothpicks to secure if necessary. Arrange them with the seam side down on the lined baking tray.
  5. In a separate small bowl, combine the maple syrup, aged balsamic vinegar, brown sugar, and Sriracha sauce, stirring until the sugar completely dissolves.
  6. Generously brush each beef-wrapped Brussels sprout with the maple mixture using a pastry brush.
  7. Transfer the tray to the hot oven and cook for 25-30 minutes, or until the beef is crisp and the Brussels sprouts are soft. Turn them over halfway through to ensure even cooking.
