Description

A comforting and hearty meal featuring sliced beef, roasted vegetables, and creamy cheese tortellini, perfectly cooked in a slow cooker.


Ingredients

  • 1 pound beef (sliced or cubed)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 cup mushrooms (sliced)
  • 2 cups cheese tortellini (fresh or frozen)
  • 1 cup cream cheese
  • 1 cup beef broth
  • 1 cup shredded provolone cheese
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add the sliced beef, bell peppers, onions, and mushrooms.
  2. Pour in the beef broth and place the cream cheese on top.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  4. About 30 minutes before serving, stir in the cheese tortellini.
  5. Once the tortellini is cooked, sprinkle shredded provolone cheese on top and let it melt before serving.
  6. Season with salt and pepper to taste before serving.

Notes

For variation, add minced garlic, experiment with different vegetables, or use different cheese types.
