A comforting and hearty meal featuring sliced beef, roasted vegetables, and creamy cheese tortellini, perfectly cooked in a slow cooker.
Ingredients

- 1 pound beef (sliced or cubed)
- 1 bell pepper (sliced)
- 1 onion (sliced)
- 1 cup mushrooms (sliced)
- 2 cups cheese tortellini (fresh or frozen)
- 1 cup cream cheese
- 1 cup beef broth
- 1 cup shredded provolone cheese
- Salt and pepper to taste
Instructions
- In a slow cooker, add the sliced beef, bell peppers, onions, and mushrooms.
- Pour in the beef broth and place the cream cheese on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
- About 30 minutes before serving, stir in the cheese tortellini.
- Once the tortellini is cooked, sprinkle shredded provolone cheese on top and let it melt before serving.
- Season with salt and pepper to taste before serving.
Notes
For variation, add minced garlic, experiment with different vegetables, or use different cheese types.
