Ingredients

- 4 cups chicken or vegetable broth
- 2 packs instant ramen noodles (discard the flavor packets)
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 2 cloves garlic, minced
- 2 sliced green onions
- 1 tablespoon soy sauce
- 1 tablespoon miso paste (optional)
Instructions
- In your slow cooker, combine the chicken or vegetable broth, sliced mushrooms, baby spinach, minced garlic, soy sauce, and miso paste if using.
- Stir well, then add the instant ramen noodles.
- Cover and cook on low for 240 minutes or on high for 120 minutes.
- Just before serving, stir in the sliced green onions.
- Serve hot with your favorite toppings like soft-boiled eggs, sesame seeds, or nori.
