Description

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 packs instant ramen noodles (discard the flavor packets)
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 cloves garlic, minced
  • 2 sliced green onions
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste (optional)

Instructions

  1. In your slow cooker, combine the chicken or vegetable broth, sliced mushrooms, baby spinach, minced garlic, soy sauce, and miso paste if using.
  2. Stir well, then add the instant ramen noodles.
  3. Cover and cook on low for 240 minutes or on high for 120 minutes.
  4. Just before serving, stir in the sliced green onions.
  5. Serve hot with your favorite toppings like soft-boiled eggs, sesame seeds, or nori.
