Description
A hearty and comforting beef barley soup made in a crockpot, filled with tender beef, nutty barley, and fresh vegetables.
Ingredients

- 1.5 lbs beef stew meat, cut into 1-inch cubes
- 1 cup pearl barley
- 1 large yellow onion, chopped
- 2 large carrots, peeled and sliced
- 2 stalks celery, chopped
- 2 medium russet potatoes, peeled and cubed
- 2 cloves garlic, minced
- 6 cups low-sodium beef broth
- 2 cups water
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
Instructions
- Season the beef stew meat with salt and pepper. Sear the cubes in a hot skillet for a few minutes until browned, if desired.
- In the same skillet, add chopped onions and minced garlic. Sauté until onions become translucent.
- In a large crockpot, combine the seared beef, sautéed onions, garlic, pearl barley, sliced carrots, chopped celery, cubed potatoes, tomato paste, Worcestershire sauce, dried thyme, bay leaf, beef broth, and water.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Before serving, taste the soup and adjust seasoning if needed. Remove bay leaf and serve.
Notes
Serve with crusty bread or rolls and garnish with freshly chopped parsley.
