Description

A hearty and comforting beef barley soup made in a crockpot, filled with tender beef, nutty barley, and fresh vegetables.


Ingredients

  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • 1 cup pearl barley
  • 1 large yellow onion, chopped
  • 2 large carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 2 medium russet potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 2 cups water
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Season the beef stew meat with salt and pepper. Sear the cubes in a hot skillet for a few minutes until browned, if desired.
  2. In the same skillet, add chopped onions and minced garlic. Sauté until onions become translucent.
  3. In a large crockpot, combine the seared beef, sautéed onions, garlic, pearl barley, sliced carrots, chopped celery, cubed potatoes, tomato paste, Worcestershire sauce, dried thyme, bay leaf, beef broth, and water.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Before serving, taste the soup and adjust seasoning if needed. Remove bay leaf and serve.

Notes

Serve with crusty bread or rolls and garnish with freshly chopped parsley.
