- 2 pounds beef stew meat, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Optional: 1 cup frozen peas
Instructions
- In a large crockpot, combine the beef, beef broth, carrots, potatoes, onion, garlic, tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- If using, stir in the frozen peas during the last 30 minutes of cooking.
- Remove the bay leaf before serving.
Notes
Consider browning the beef for enhanced flavor. Adjust seasoning before serving and enjoy with crusty bread or biscuits.
