Ingredients

  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas

Instructions

  1. In a large crockpot, combine the beef, beef broth, carrots, potatoes, onion, garlic, tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  4. If using, stir in the frozen peas during the last 30 minutes of cooking.
  5. Remove the bay leaf before serving.

Notes

Consider browning the beef for enhanced flavor. Adjust seasoning before serving and enjoy with crusty bread or biscuits.
