Description

A hearty and comforting crockpot beef stew, perfect for chilly weather, made with tender beef, seasonal vegetables, and aromatic herbs.


Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 4 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Brown the beef chunks on all sides, then transfer to the crockpot.
  2. In the same skillet, sauté the onions and garlic until softened.
  3. Add the sautéed onions, carrots, potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the crockpot.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 7-8 hours or high for 3-4 hours until the beef is tender and the vegetables are cooked through.
  6. Serve warm.

Notes

For added richness, consider adding a splash of Worcestershire sauce or adjusting the seasonings just before serving. Fresh herbs can enhance flavor greatly.
