- 2 lbs beef stew meat, cut into chunks
- 4 cups beef broth
- 4 carrots, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Brown the beef chunks on all sides, then transfer to the crockpot.
- In the same skillet, sauté the onions and garlic until softened.
- Add the sautéed onions, carrots, potatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper to the crockpot.
- Stir to combine all ingredients.
- Cover and cook on low for 7-8 hours or high for 3-4 hours until the beef is tender and the vegetables are cooked through.
- Serve warm.
Notes
For added richness, consider adding a splash of Worcestershire sauce or adjusting the seasonings just before serving. Fresh herbs can enhance flavor greatly.
