- 2 pounds beef stew meat, cut into 1-inch cubes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 1/2 cup water
- 1/2 cup sour cream
- 12 ounces egg noodles, cooked and drained
Instructions
- Combine beef, onion, and garlic in the crockpot.
- In a separate bowl, whisk together beef broth, Worcestershire sauce, salt, black pepper, and thyme; pour over the beef mixture.
- Cover the crockpot and cook on low for 7-8 hours or on high for 4-5 hours.
- Mix flour with water until smooth and stir this into the crockpot; cook on high for another 30 minutes.
- Stir in sour cream before serving.
- Ladle the beef tips and gravy over the cooked egg noodles and enjoy.
Notes
For added flavor, consider browning the beef before adding to the crockpot and experiment with additional vegetables like carrots or potatoes.
