- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 3 cups potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, chopped
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup milk
- Chopped green onions for garnish
Instructions
- In a skillet, brown the ground beef with chopped onion and minced garlic. Drain excess fat.
- Transfer the beef mixture to a crockpot.
- Add beef broth, diced potatoes, carrots, celery, oregano, paprika, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in shredded cheese and milk. Mix well and let it heat through.
- Serve hot, garnished with chopped green onions.
