Description

Tender and flavorful beef roast cooked in a slow cooker, served in a sandwich with provolone cheese and au jus for dipping.


Ingredients

Scale
  • 2 1/2 to 3 pounds beef roast (such as chuck roast)
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 sandwich rolls
  • Sliced provolone cheese

Instructions

  1. Place the sliced onion and minced garlic in the bottom of the slow cooker.
  2. Season the beef roast with salt and pepper and place it on top of the onions.
  3. In a separate bowl, mix the beef broth, Worcestershire sauce, thyme, and pour over the beef.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  5. Remove the beef, shred it, and return it to the slow cooker to absorb the juices.
  6. Serve the shredded beef on sandwich rolls topped with provolone cheese and a side of au jus for dipping.

Notes

For an extra flavor boost, consider searing the beef roast before slow cooking it. Adjust seasoning throughout the cooking process if needed.
