Description
Tender and flavorful beef roast cooked in a slow cooker, served in a sandwich with provolone cheese and au jus for dipping.
Ingredients

- 2 1/2 to 3 pounds beef roast (such as chuck roast)
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 8 sandwich rolls
- Sliced provolone cheese
Instructions
- Place the sliced onion and minced garlic in the bottom of the slow cooker.
- Season the beef roast with salt and pepper and place it on top of the onions.
- In a separate bowl, mix the beef broth, Worcestershire sauce, thyme, and pour over the beef.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Remove the beef, shred it, and return it to the slow cooker to absorb the juices.
- Serve the shredded beef on sandwich rolls topped with provolone cheese and a side of au jus for dipping.
Notes
For an extra flavor boost, consider searing the beef roast before slow cooking it. Adjust seasoning throughout the cooking process if needed.
