- 2 chicken breasts
- 1 can coconut milk
- 4 cups chicken broth
- 1 tablespoon red curry paste
- 1 tablespoon fish sauce
- 2 teaspoons lime juice
- 1 cup vegetables (bell peppers, carrots, broccoli)
- 1 tablespoon ginger, minced
- 2 garlic cloves, minced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- In a bowl, mix together the coconut milk, chicken broth, red curry paste, fish sauce, lime juice, ginger, and garlic.
- Pour the mixture over the chicken in the crockpot.
- Add the vegetables to the crockpot.
- Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
- Before serving, shred the chicken in the crockpot with two forks.
- Serve the soup hot, garnished with fresh cilantro and lime wedges.
Notes
Adjust the lime juice and fish sauce to taste for a personalized flavor.
