A comforting and flavorful Thai coconut chicken soup made effortlessly in a crockpot.


Ingredients

  • 2 chicken breasts
  • 1 can coconut milk
  • 4 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 2 teaspoons lime juice
  • 1 cup vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon ginger, minced
  • 2 garlic cloves, minced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a bowl, mix together the coconut milk, chicken broth, red curry paste, fish sauce, lime juice, ginger, and garlic.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add the vegetables to the crockpot.
  5. Cover and cook on low for 360-480 minutes or high for 180-240 minutes.
  6. Before serving, shred the chicken in the crockpot with two forks.
  7. Serve the soup hot, garnished with fresh cilantro and lime wedges.

Notes

Adjust the lime juice and fish sauce to taste for a personalized flavor.
