- 1 tbsp Cornflour
- ½ tsp Baking Soda
- ½ tsp Baking Powder
- ½ tsp Salt
- 90 g Butter (softened)
- 90 g Cream Cheese
- 250 g Icing Sugar
Instructions
- Cream together the softened butter, cream cheese, and sugar until smooth.
- Gradually mix in the sugars until light and fluffy.
- Add the melted butter, egg, and vanilla extract, combining thoroughly.
- In a separate bowl, whisk together the flour, cornflour, baking soda, baking powder, and salt.
- Slowly incorporate the dry mixture into the wet ingredients, stirring until just combined.
- Using a cookie scoop, portion out the dough onto prepared baking sheets, leaving space between each for spreading.
- Bake in a preheated oven for about 10-12 minutes, or until the edges turn lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes for better texture. Don’t overbake for a perfect chewy center.
