Ingredients

  • 70 g Sugar
  • 115 g Butter (melted)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 90 g Butter (softened)
  • 90 g Cream Cheese
  • 250 g Icing Sugar

Instructions

  1. Cream together the softened butter, cream cheese, and sugar until smooth.
  2. Gradually mix in the sugars until light and fluffy.
  3. Add the melted butter, egg, and vanilla extract, combining thoroughly.
  4. In a separate bowl, whisk together the flour, cornflour, baking soda, baking powder, and salt.
  5. Slowly incorporate the dry mixture into the wet ingredients, stirring until just combined.
  6. Using a cookie scoop, portion out the dough onto prepared baking sheets, leaving space between each for spreading.
  7. Bake in a preheated oven for about 10-12 minutes, or until the edges turn lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes for better texture. Don’t overbake for a perfect chewy center.
