Ingredients
2 cups fresh spinach, chopped
1 cup ricotta cheese
3 large eggs
1/2 cup milk (whole or low-fat)
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/4 cup onion, finely diced
2 cloves garlic, minced
Salt and pepper, to taste
Olive oil, for sautรฉing
Optional: Fresh herbs (basil or parsley) for garnish
Instructions
1. Preheat oven to 375ยฐF (190ยฐC). Grease a pie dish or baking dish with olive oil.
2. Heat olive oil in a skillet over medium heat. Sautรฉ onion for 3-5 minutes until softened. Add garlic and spinach, cook until wilted. Remove from heat and cool slightly.
3. In a large mixing bowl, whisk together ricotta, eggs, and milk until smooth. Stir in Parmesan, mozzarella, and spinach mixture. Season with salt and pepper.
4. Pour mixture into prepared baking dish. Bake for 35-40 minutes or until set and golden on top.
5. Let cool slightly before slicing. Garnish with fresh herbs if desired. Serve warm.
Notes
Use frozen spinach if neededโthaw and squeeze out excess moisture.
