  • 2 large cucumbers, thinly sliced
  • 3 medium carrots, julienned or spiralized
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons fresh chives, finely chopped
  • For the honey-mustard dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 tablespoons raw honey
  • 1 small garlic clove, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • Optional garnishes:
  • 2 tablespoons toasted sunflower or pumpkin seeds
  • 1/4 cup crumbled feta cheese
  • Extra fresh herbs for garnish

Instructions

  1. Wash and slice cucumbers into thin rounds (about 1/8 inch thick).
  2. Julienne or spiralize the carrots.
  3. Slice red onion thinly and soak in cold water for 10 minutes to mellow the flavor.
  4. Chop fresh dill and chives.
  5. Whisk together olive oil, vinegar, mustard, honey, garlic, salt, and pepper for the dressing.
  6. Combine vegetables in a large bowl, add three-quarters of the dressing, and toss.
  7. Add herbs and toss again.
  8. Let marinate for 30 minutes in the refrigerator (optional).
  9. Before serving, add remaining dressing and optional garnishes.

Notes

  • For extra crispness, salt cucumbers and let drain for 15 minutes before assembling.
  • Make dressing in a jar with a tight lid for easy mixing and storage.
  • Store vegetables and dressing separately if preparing ahead.
  • Best consumed within 48 hours.
