A refreshing summer salad combining crisp cucumbers and carrots with a sweet-tangy honey mustard dressing. Perfect as a light side dish that’s both healthy and flavorful.

- For the salad base:
- 2 large cucumbers, thinly sliced
- 3 medium carrots, julienned or spiralized
- 1/2 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 2 tablespoons fresh chives, finely chopped
- For the honey-mustard dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons raw honey
- 1 small garlic clove, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- Pinch of red pepper flakes (optional)
- Optional garnishes:
- 2 tablespoons toasted sunflower or pumpkin seeds
- 1/4 cup crumbled feta cheese
- Extra fresh herbs for garnish
Instructions
- Wash and slice cucumbers into thin rounds (about 1/8 inch thick).
- Julienne or spiralize the carrots.
- Slice red onion thinly and soak in cold water for 10 minutes to mellow the flavor.
- Chop fresh dill and chives.
- Whisk together olive oil, vinegar, mustard, honey, garlic, salt, and pepper for the dressing.
- Combine vegetables in a large bowl, add three-quarters of the dressing, and toss.
- Add herbs and toss again.
- Let marinate for 30 minutes in the refrigerator (optional).
- Before serving, add remaining dressing and optional garnishes.
Notes
- For extra crispness, salt cucumbers and let drain for 15 minutes before assembling.
- Make dressing in a jar with a tight lid for easy mixing and storage.
- Store vegetables and dressing separately if preparing ahead.
- Best consumed within 48 hours.
- Not suitable for freezing.
