Description

A refreshing twist on the classic Caesar salad, featuring crisp cucumbers and a creamy dressing.

Ingredients

Scale
  • 1 large English cucumber, peeled and thinly sliced
  • 1/2 cup mayonnaise (full-fat recommended)
  • 2 tablespoons grated Parmesan cheese, plus more for garnish
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper, freshly ground
  • 1/8 teaspoon salt, or to taste
  • 1/4 cup croutons (homemade or store-bought)
  • Optional: Grilled chicken or shrimp for added protein

Instructions

  1. Begin by peeling the cucumber and slicing it into 1/8-inch thick rounds. Pat the slices dry with paper towels or lightly salt them, allowing them to sit in a colander for 15-20 minutes. Rinse thoroughly and dry again.
  2. In a medium-sized bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce until smooth and well combined.
  3. Add minced garlic and grated Parmesan cheese to the dressing. Season with black pepper and salt, adjusting seasoning to your preference.
  4. Whisk the dressing until it achieves a smooth and creamy consistency. If it’s too thick, add a teaspoon or two of water to reach your desired texture.
  5. In a separate bowl, gently toss the sliced cucumber with the prepared Caesar dressing until evenly coated.
  6. Just before serving, sprinkle in the croutons and gently toss them through the salad to combine.
  7. Transfer the salad to a serving bowl or individual plates. Garnish with extra grated Parmesan cheese and a sprinkle of fresh black pepper. If desired, top with grilled chicken or shrimp for a hearty addition.
  8. Serve the salad immediately. Enjoy this refreshing dish as an appetizer or a light main course!

Notes

For the best flavor, use freshly squeezed lemon juice and adjust seasoning to your taste. Serve immediately for the best texture.
