Description

A refreshing salad featuring crunchy cucumber, sweet cherry tomatoes, creamy mozzarella, and nutritious avocado, perfect for warm days.

Ingredients

Scale
  • 1/2 English cucumber (cut into quarters lengthwise and sliced)
  • 3 cups halved cherry tomatoes
  • 8 oz fresh mozzarella balls (or 1 cup diced fresh mozzarella)
  • 1 large diced avocado
  • 1/3 cup chopped basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (peeled and either pressed or grated)
  • 1/2 teaspoon fine sea salt (adjust to taste)
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Start by placing the sliced cucumber in a serving bowl.
  2. Follow with the halved cherry tomatoes.
  3. Incorporate the mozzarella balls and diced avocado next.
  4. Add the chopped basil leaves for extra flavor.
  5. Create the dressing in a separate bowl by whisking together olive oil, balsamic vinegar, garlic, salt, and pepper.
  6. Drizzle the dressing over the salad just before serving.
  7. Gently toss the salad to coat everything evenly.
  8. Serve immediately and enjoy!

Notes

For a cooler dish, chill your salad bowl before assembling. Diced avocado should be added last to prevent browning.
