Instructions
- Preheat your oven to 325°F (160°C) and grease the springform pan.
- In a mixing bowl, combine the crushed cookies and melted butter.
- Press the mixture firmly into the bottom of the springform pan to create the crust.
- In a separate bowl, beat the cream cheese until smooth.
- Gradually add the granulated sugar, mixing until well combined.
- Pour in the melted dark chocolate and vanilla extract, continuing to mix until incorporated.
- Add the eggs, one at a time, beating minimally to avoid cracks.
- Gently fold in the fresh raspberries.
- Pour the cheesecake mixture over the prepared crust in the springform pan.
- Bake for approximately 55-60 minutes, or until the center is set but slightly jiggly.
- Remove from the oven and allow the cheesecake to cool in the pan for about an hour.
- Transfer to the fridge and chill for at least four hours before serving.
