  • 1 pound ground beef (substitute with ground chicken or turkey)
  • 2 tablespoons taco seasoning (homemade or low-sodium)
  • 4 pieces low-carb tortillas (like Mission Carb Balance or almond flour tortillas)
  • 1 cup sour cream (Greek yogurt for a lighter option)
  • 1 cup shredded lettuce
  • 1 medium tomato (bell peppers optional)
  • 1 cup extra cheddar cheese (add pepper jack for spice)
  • 1/4 cup cilantro (or parsley, if preferred)
  • 1/2 cup jalapeño slices (optional)
  • 1 tablespoon olive oil (any cooking oil works)

Instructions

  1. Begin by melting the butter in a medium saucepan over low heat. Add cream cheese until fully incorporated. Gradually mix in heavy whipping cream, stirring until smooth, then add shredded cheddar cheese to make a creamy sauce. Set aside.
  2. Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Stir in taco seasoning, allowing it to simmer to meld flavors.
  3. Place a tortilla in a dry skillet over medium heat and cook for about a minute until it starts to crisp but remains pliable. Repeat for all tortillas.
  4. Start assembling by spreading sour cream on a tortilla, layer the beef mixture, pour on cheese sauce, and top with lettuce, tomato, cilantro, and jalapeño slices. Fold the tortilla like an envelope.
  5. Heat a clean skillet over medium heat and place the wrapped crunchwrap seam side down. Cook for about 3 minutes until golden brown, then flip and cook the other side until crisp.
