- 1 tablespoon dark soy sauce (15 ml)

- 1 tablespoon (15 ml) ginger, sliced (15 grams)
- 3 cloves garlic, minced
- 1 star anise
- 1 cinnamon stick
- 1 tablespoon vegetable oil (15 ml)
- 1 cup beef broth (240 ml)
- 2 tablespoons (30 ml) cornstarch (16 grams)
- 2 tablespoons water (30 ml)
- Salt to taste
- Green onions, chopped for garnish
Instructions
- Clean the chicken feet thoroughly and trim any nails.
- In a large pot, bring water to a boil and add the chicken feet.
- Boil the chicken feet for 5 minutes, then drain and rinse with cold water.
- In a large pan, heat the vegetable oil over medium heat.
- Add the ginger and garlic, sauté until fragrant.
- Add the chicken feet to the pan and stir well.
- Pour in the soy sauce, oyster sauce, and dark soy sauce.
- Add the sugar, star anise, and cinnamon stick.
- Stir to coat the chicken feet evenly with the sauce.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 1 hour.
- In a small bowl, mix the cornstarch and water to make a slurry.
- After 1 hour, add the cornstarch slurry to the pan.
- Stir well and simmer until the sauce thickens.
- Season with salt to taste.
- Remove from heat and transfer to a serving dish.
- Garnish with chopped green onions before serving.
