  • Pinch of sea salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water until smooth. Cool slightly for 5 minutes.
  3. Crush saffron threads and mix with rose water in a small bowl. Let stand for 3 minutes.
  4. Whisk eggs and sugar until pale and fluffy (3-4 minutes) until the mixture forms ribbons when lifted.
  5. Pour the cooled chocolate mixture into the egg mixture, add vanilla extract and rose water-saffron infusion. Fold gently until combined.
  6. Sift flour, cocoa powder, cardamom, and cinnamon together, then fold into the wet ingredients until just incorporated.
  7. Gently fold in 3/4 of the pistachios, all chopped dates, and white chocolate chips.
