An exquisite Dubai chocolate dessert that combines rich dark chocolate with aromatic Middle Eastern flavors like rose water, cardamom, and saffron, creating a luxurious treat with pistachios and dates.

- 200g unsalted butter
- 4 large eggs, at room temperature
- 250g granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons rose water
- 100g all-purpose flour
- 50g cocoa powder
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon cinnamon
- 1/8 teaspoon saffron threads, crushed (optional)
- 100g pistachios, chopped
- 75g dried dates, finely chopped
- 50g white chocolate chips
- Pinch of sea salt
Instructions
- Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- Melt dark chocolate and butter together in a heatproof bowl over simmering water until smooth. Cool slightly for 5 minutes.
- Crush saffron threads and mix with rose water in a small bowl. Let stand for 3 minutes.
- Whisk eggs and sugar until pale and fluffy (3-4 minutes) until the mixture forms ribbons when lifted.
- Pour the cooled chocolate mixture into the egg mixture, add vanilla extract and rose water-saffron infusion. Fold gently until combined.
- Sift flour, cocoa powder, cardamom, and cinnamon together, then fold into the wet ingredients until just incorporated.
- Gently fold in 3/4 of the pistachios, all chopped dates, and white chocolate chips.
- Pour batter into the prepared pan, smooth the top, and sprinkle with remaining pistachios and sea salt.
- Bake for 30-35 minutes, until a toothpick inserted comes out with a few moist crumbs.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before cutting.
Notes
- Substitute rose water with orange blossom water if preferred.
- For a healthier version, replace half the butter with unsweetened applesauce.
- Use coconut sugar instead of granulated sugar for a lower glycemic index.
