- 2 lbs Yukon Gold or Russet potatoes
- 4 tablespoons butter
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 egg yolk
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop potatoes into uniform chunks.
- Boil potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Mash with butter, heavy cream, Parmesan, and season with salt and pepper until smooth.
- Cool slightly, then mix in the egg yolk.
- Transfer mixture to a piping bag and pipe onto a baking sheet into desired shapes.
- Bake for 20-25 minutes until golden and crispy.
- Garnish with parsley before serving hot.
