Description

A comforting and creamy butternut squash casserole that captures the essence of home-cooked goodness.

Ingredients

Scale
  • 1 medium butternut squash
  • 2 cups of cooked quinoa or rice
  • 1 cup of shredded cheese (your choice)
  • 1/2 cup of cream or a dairy alternative
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Optional toppings: breadcrumbs, additional cheese, fresh herbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel, seed, and dice the butternut squash into small cubes. Set it aside.
  3. In a large pot, bring water to a boil. Add the butternut squash and cook for about 10 minutes, or until tender. Drain and set aside.
  4. In a large mixing bowl, combine the cooked quinoa or rice, shredded cheese, cream, garlic, thyme, salt, and pepper. Stir until well incorporated.
  5. Add the cooked squash to the mixture and gently fold it in.
  6. Transfer the mixture into a greased baking dish and spread it evenly.
  7. Optionally, sprinkle breadcrumbs and extra cheese on top for added crunch.
  8. Bake for 25-30 minutes or until the top is golden and bubbly.

Notes

For a roastier flavor, you can opt to roast the squash before combining it into the casserole.
