A comforting and creamy butternut squash casserole that captures the essence of home-cooked goodness.

- 1 medium butternut squash
- 2 cups of cooked quinoa or rice
- 1 cup of shredded cheese (your choice)
- 1/2 cup of cream or a dairy alternative
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Optional toppings: breadcrumbs, additional cheese, fresh herbs
Instructions
- Preheat the oven to 375°F (190°C).
- Peel, seed, and dice the butternut squash into small cubes. Set it aside.
- In a large pot, bring water to a boil. Add the butternut squash and cook for about 10 minutes, or until tender. Drain and set aside.
- In a large mixing bowl, combine the cooked quinoa or rice, shredded cheese, cream, garlic, thyme, salt, and pepper. Stir until well incorporated.
- Add the cooked squash to the mixture and gently fold it in.
- Transfer the mixture into a greased baking dish and spread it evenly.
- Optionally, sprinkle breadcrumbs and extra cheese on top for added crunch.
- Bake for 25-30 minutes or until the top is golden and bubbly.
Notes
For a roastier flavor, you can opt to roast the squash before combining it into the casserole.
