Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 1/4 cup chopped fresh parsley
  • 1/3 cup chopped sun-dried tomatoes
  • 1 egg
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, and Parmesan cheese.
  2. Add minced garlic, chopped parsley, and sun-dried tomatoes. Mix well.
  3. Crack an egg into the mixture, sprinkle in oregano, salt, and pepper. Mix until uniform.
  4. Shape the mixture into even patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook patties for 5-6 minutes on each side until golden brown and cooked through.
  7. Remove from skillet and let rest for a few minutes before serving.

Notes

For a crispier finish, add a small bit of oil to each side of the patties before cooking. Chilling patties for 30 minutes before cooking can help them hold together.
