Ingredients

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves minced garlic
- 1/4 cup chopped fresh parsley
- 1/3 cup chopped sun-dried tomatoes
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil for frying
Instructions
- In a large mixing bowl, combine ground chicken, breadcrumbs, and Parmesan cheese.
- Add minced garlic, chopped parsley, and sun-dried tomatoes. Mix well.
- Crack an egg into the mixture, sprinkle in oregano, salt, and pepper. Mix until uniform.
- Shape the mixture into even patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 5-6 minutes on each side until golden brown and cooked through.
- Remove from skillet and let rest for a few minutes before serving.
Notes
For a crispier finish, add a small bit of oil to each side of the patties before cooking. Chilling patties for 30 minutes before cooking can help them hold together.
