A comforting and hearty beef stew that warms the soul, made easily in a crock pot.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil (optional for browning beef)
Instructions
- In a large skillet, heat olive oil over medium heat. Brown the beef pieces for about 5-7 minutes, then transfer to the crock pot.
- Add the carrots, potatoes, onion, and garlic on top of the beef in the crock pot.
- Pour the beef broth over the ingredients, then stir in the tomato paste, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
- Serve hot and enjoy your cozy meal!
Notes
For a thicker stew, remove the lid for the last hour of cooking to allow extra moisture to evaporate. Experiment with additional seasonings like bay leaf or Worcestershire sauce for extra flavor.
