Description

A comforting and hearty beef stew that warms the soul, made easily in a crock pot.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil (optional for browning beef)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Brown the beef pieces for about 5-7 minutes, then transfer to the crock pot.
  2. Add the carrots, potatoes, onion, and garlic on top of the beef in the crock pot.
  3. Pour the beef broth over the ingredients, then stir in the tomato paste, thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef and vegetables are tender.
  5. Serve hot and enjoy your cozy meal!

Notes

For a thicker stew, remove the lid for the last hour of cooking to allow extra moisture to evaporate. Experiment with additional seasonings like bay leaf or Worcestershire sauce for extra flavor.
