- 1 lb chicken breast, sliced
- 1 bell pepper, sliced (any color)
- 1 onion, sliced
- 1 can diced tomatoes (14 oz)
- 1 packet fajita seasoning
- Salt and pepper to taste
- Tortillas, for serving
Instructions
- Place the sliced chicken, bell pepper, onion, diced tomatoes, and fajita seasoning in the slow cooker.
- Stir until everything is well combined.
- Cover the slow cooker with its lid and set it to low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix it well with the remaining ingredients in the slow cooker.
- Serve the fajita mixture warm in tortillas and enjoy!
