- 2 cups cooked rice
- 2 eggs
- 2 tablespoons soy sauce
- 1 cup mixed vegetables (peas, carrots, etc.)
- 2 tablespoons green onions, chopped
- 1 tablespoon oil
Instructions
- Heat oil in a pan over medium heat.
- Scramble the eggs and cook until just set, then remove and set aside.
- In the same pan, add the cooked rice and stir-fry for a few minutes.
- Add the mixed vegetables and soy sauce, and stir-fry until heated through.
- Stir the scrambled eggs back into the pan and mix well.
- Garnish with chopped green onions and serve hot.
Notes
For added flavor, season your eggs lightly with salt or pepper before scrambling. Use high heat during cooking for best results.
