Ingredients

- 2 lbs Beef chuck
- 1 Bay leaf
- 1 Large carrot
- 4 Garlic cloves
- 2 tsp Fresh thyme leaves
- 1/2 Large yellow onion
- 2 Yukon gold potatoes
- 2 cups Beef broth
- 1/4 cup Tomato paste
- 1 tbsp Worcestershire sauce
- 1/2 tsp Coarsely ground black pepper
- 2 tbsp Gluten-free all-purpose flour
- 1 tsp Kosher salt
- 2 tbsp Olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef chuck and brown it on all sides.
- Remove the beef and set aside.
- In the same pot, add the onion, garlic, and large carrot, and sauté until softened.
- Stir in the gluten-free flour, salt, black pepper, and fresh thyme; mix well.
- Return the browned beef to the pot and add the beef broth, tomato paste, bay leaves, and Yukon gold potatoes.
- Bring to a simmer, cover, and cook for about 150 minutes until the beef is tender.
- Adjust seasoning if necessary and serve warm.
Notes
For a thicker stew, let it simmer uncovered for a bit longer to allow excess liquid to evaporate.
