Easy Homemade Beef Stew

A comforting and hearty beef stew that warms the soul, perfect for chilly days and family gatherings.


Ingredients

  • 2 lbs Beef chuck
  • 1 Bay leaf
  • 1 Large carrot
  • 4 Garlic cloves
  • 2 tsp Fresh thyme leaves
  • 1/2 Large yellow onion
  • 2 Yukon gold potatoes
  • 2 cups Beef broth
  • 1/4 cup Tomato paste
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp Coarsely ground black pepper
  • 2 tbsp Gluten-free all-purpose flour
  • 1 tsp Kosher salt
  • 2 tbsp Olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef chuck and brown it on all sides.
  3. Remove the beef and set aside.
  4. In the same pot, add the onion, garlic, and large carrot, and sauté until softened.
  5. Stir in the gluten-free flour, salt, black pepper, and fresh thyme; mix well.
  6. Return the browned beef to the pot and add the beef broth, tomato paste, bay leaves, and Yukon gold potatoes.
  7. Bring to a simmer, cover, and cook for about 150 minutes until the beef is tender.
  8. Adjust seasoning if necessary and serve warm.

Notes

For a thicker stew, let it simmer uncovered for a bit longer to allow excess liquid to evaporate.
