- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup buttermilk
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
- 1 cup powdered sugar (for glaze)
- 2 tablespoons lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, eggs, buttermilk, lemon juice, and lemon zest until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- For the glaze, mix the powdered sugar with lemon juice until smooth.
- Once the bread has cooled, drizzle the glaze over the top.
