Ingredients

  • 1 cup orzo pasta
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring 2 cups of water to a rolling boil in a pot.
  2. Add 1 cup of orzo pasta to the boiling water and cook according to the package instructions (about 8 to 10 minutes).
  3. Once cooked, drain the orzo in a colander and let it cool.
  4. In a large mixing bowl, combine the cooled orzo, halved cherry tomatoes, diced cucumber, red onion, crumbled feta cheese, and chopped parsley.
  5. In a small bowl, whisk together the olive oil and lemon juice, adding salt and pepper to taste.
  6. Pour the dressing over the salad ingredients and toss gently to combine.
  7. Serve the salad chilled or at room temperature.

Notes

Rinse the orzo under cold water after draining to prevent clumping, and feel free to add seasonal vegetables or proteins for variations.
