- 5 cups (around 750–800g) sliced peaches (peeled or unpeeled)
- 1/4 cup (31g) all-purpose flour (spooned & leveled)
- 1/2 cup (100g) granulated sugar
- 1/8 teaspoon (1 ml) salt
- 1 Tablespoon (15ml) lemon juice
- 1/2 teaspoon (3 ml) pure vanilla extract
- 1/2 cup (100g) packed light or dark brown sugar
- 2/3 cup (84g) all-purpose flour
- 1 teaspoon (5 ml) ground cinnamon
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (113g) beef tallow, very cold and cubed
- 2/3 cup (57g) old-fashioned whole rolled oats (or quick oats)
- optional: 2/3 cup (95g) chopped or halved unsalted walnuts
Instructions
- Warm your oven to 350°F (177°C). Lightly coat a deep 9-inch pie dish, square pan, 10-inch cast iron skillet, or any baking dish that holds 2 to 2.5 quarts and set it aside.
- In a large bowl, combine all the ingredients for the filling gently, then spread this mixture in the prepared baking dish.
- For the topping, blend the brown sugar, flour, cinnamon, and salt in a medium-sized bowl. Incorporate the cold beef tallow by cutting it in with a pastry cutter or forks until the texture becomes crumbly. Mix in the oats and walnuts, if using, and distribute this mixture evenly over the filling.
- Place in the oven and bake for 45–50 minutes until the top is golden and the fruit juices are bubbling at the edges. Once baked, take it out of the oven and let it cool on a wire rack for a few minutes before serving warm. It can also be enjoyed at room temperature or cold.
- Keep any leftovers covered and store them in the fridge for up to 5 days.
