Description
Transform humble cabbage into a delicious dish with roasted edges and rich onion Dijon sauce.
Ingredients

- 1/2 medium green cabbage (about 1½ pounds)
- 1 tablespoon olive oil (or garlic-infused olive oil)
- Salt and pepper, to taste
- 3 tablespoons butter (or margarine, to be dairy-free)
- 2 tablespoons minced fresh onion (or shallot)
- 1 tablespoon Dijon mustard (or to taste)
- 1/2 teaspoon minced garlic (or 1/4 teaspoon dried garlic)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Optional: chopped chives or parsley for serving
Instructions
- Preheat your oven to 450°F (232°C).
- Line a baking sheet with parchment or silicone.
- Cut the cabbage half into four equal wedges and place them on the prepared baking sheet.
- Brush the cut side of each wedge with olive oil and sprinkle with salt and pepper. Turn the wedges and repeat.
- Place the baking sheet in the oven and roast for 10-12 minutes.
- Flip the wedges and roast for an additional 8-10 minutes until nicely browned.
- While the cabbage roasts, prepare the sauce by combining the butter, minced onion, Dijon mustard, minced garlic, and a pinch of salt and pepper in a small saucepan over medium heat until the butter melts.
- Arrange the roasted cabbage wedges on a plate, drizzle the sauce over them, and garnish with chives or parsley if desired.
Notes
For extra flavor, consider infusing your olive oil with garlic before use. You can also try different types of mustard for the sauce.
