Ingredients

- 1 lb fresh salmon fillets or canned salmon
- 1 cup gluten-free breadcrumbs or crushed rice cakes
- 2 eggs
- 1/4 cup fresh dill or parsley, chopped
- 1 tsp garlic powder
- 1/2 tsp pepper
- 1/4 cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp lemon zest
- Oil for frying or baking
Instructions
- If using fresh salmon fillets, debone and cut into bite-sized pieces. If using canned salmon, drain and flake it.
- In a large mixing bowl, combine the salmon, breadcrumbs, chopped herbs, garlic powder, pepper, and eggs.
- Mix gently to incorporate without breaking the fish.
- Form the mixture into uniform patties.
- Chill the patties for about 20 minutes in the refrigerator.
- Heat oil in a skillet over medium heat. Cook patties for 4-5 minutes on each side until golden brown.
- Alternatively, bake at 400°F (200°C) for 15-20 minutes on a parchment-lined baking sheet.
Notes
For a lighter option, bake the patties instead of frying. Feel free to add grated vegetables or spices to customize the flavor.
