Description
A comforting and hearty soup made with chicken sausage, tortellini, and spinach, perfect for chilly days.
Ingredients

- 3 tbsp olive oil
- 1 15 oz can of tomato sauce
- 1 48 oz chicken broth + 1 8 oz chicken broth
- 2 14.5 oz cans of fire roasted tomatoes
- 1 15 oz can of white cannellini beans (drained & rinsed)
- 2 8 oz packages of tortellini (cheese or spinach)
- 8 chicken sausage links (cut into rings about 1/8 inch thick)
- 1/2 yellow onion (diced)
- 3 garlic cloves (minced)
- 1 cup spinach (broken apart)
- 1 1/2 tsp basil (plus more for garnish)
- 2 tsp salt
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp chile con carne seasoning
- 1 tbsp arrowroot powder + 2 tbsp warm water
- 1/2 cup half & half
Instructions
- In a large soup pot, add 3 tablespoons of olive oil and set to medium heat. Allow the oil to warm up before introducing the diced onion and minced garlic.
- Let the onion and garlic brown for about 3-4 minutes, stirring occasionally to avoid burning.
- Add the sliced chicken sausage and cook for an additional 2-3 minutes.
- Sprinkle the spices: add 1 teaspoon each of cumin, basil, and salt on top of the chicken sausage. Mix thoroughly and let them blend for another 2-3 minutes.
- Pour in the can of tomato sauce and the two cans of fire-roasted tomatoes, followed by both chicken broths and the remaining spices. Stir well to combine.
- Bring the mixture to a boil, then cover and reduce the heat, letting it simmer for at least one hour.
- Add the tortellini, bring the soup back to a boil, then reduce the heat and simmer again for a few minutes.
- Stir in the half & half, spinach, and cannellini beans.
- Mix arrowroot powder with warm water and pour it into the soup while stirring.
- Adjust the heat to medium and stir for 1-2 minutes until desired thickness is achieved.
- Allow to simmer on low until ready to serve. Garnish with fresh basil and cheese before serving.
Notes
For thicker soup, adjust the amount of arrowroot powder used. Use high-quality broth for better flavor.
