Easy Sausage Spinach Tortellini Soup

Description

A comforting and hearty soup made with chicken sausage, tortellini, and spinach, perfect for chilly days.


Ingredients

  • 3 tbsp olive oil
  • 1 15 oz can of tomato sauce
  • 1 48 oz chicken broth + 1 8 oz chicken broth
  • 2 14.5 oz cans of fire roasted tomatoes
  • 1 15 oz can of white cannellini beans (drained & rinsed)
  • 2 8 oz packages of tortellini (cheese or spinach)
  • 8 chicken sausage links (cut into rings about 1/8 inch thick)
  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup spinach (broken apart)
  • 1 1/2 tsp basil (plus more for garnish)
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp chile con carne seasoning
  • 1 tbsp arrowroot powder + 2 tbsp warm water
  • 1/2 cup half & half

Instructions

  1. In a large soup pot, add 3 tablespoons of olive oil and set to medium heat. Allow the oil to warm up before introducing the diced onion and minced garlic.
  2. Let the onion and garlic brown for about 3-4 minutes, stirring occasionally to avoid burning.
  3. Add the sliced chicken sausage and cook for an additional 2-3 minutes.
  4. Sprinkle the spices: add 1 teaspoon each of cumin, basil, and salt on top of the chicken sausage. Mix thoroughly and let them blend for another 2-3 minutes.
  5. Pour in the can of tomato sauce and the two cans of fire-roasted tomatoes, followed by both chicken broths and the remaining spices. Stir well to combine.
  6. Bring the mixture to a boil, then cover and reduce the heat, letting it simmer for at least one hour.
  7. Add the tortellini, bring the soup back to a boil, then reduce the heat and simmer again for a few minutes.
  8. Stir in the half & half, spinach, and cannellini beans.
  9. Mix arrowroot powder with warm water and pour it into the soup while stirring.
  10. Adjust the heat to medium and stir for 1-2 minutes until desired thickness is achieved.
  11. Allow to simmer on low until ready to serve. Garnish with fresh basil and cheese before serving.

Notes

For thicker soup, adjust the amount of arrowroot powder used. Use high-quality broth for better flavor.
