Ingredients

- 6 roma tomatoes, halved
- 4 carrots, peeled and halved
- 1 red pepper, cut into quarters
- 1 white onion, halved
- 2 garlic bulbs
- 1 yellow zucchini, sliced
- 1 green zucchini, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 teaspoons dried basil
- 1 teaspoon Italian seasonings
- 1 teaspoon dried oregano
- 2 1/2 cups boiling water
- 1 cup milk or coconut milk
- A handful of fresh basil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and garlic, sautéing until the onions are translucent.
- Add the carrots, red pepper, yellow zucchini, and green zucchini, cooking for 5-7 minutes.
- Stir in the roma tomatoes, dried basil, Italian seasonings, and dried oregano.
- Pour in the boiling water and season with salt and pepper.
- Let the soup simmer for about 20-30 minutes until the vegetables are tender.
- Remove from heat, stir in the milk or coconut milk, and blend until desired consistency.
- Serve hot, garnished with fresh basil.
Notes
Feel free to swap vegetables for those in season, or add beans for extra protein.
