Description

A vibrant, hearty soup made with a medley of fresh vegetables, perfect for a light lunch or cozy dinner.


Ingredients

  • 6 roma tomatoes, halved
  • 4 carrots, peeled and halved
  • 1 red pepper, cut into quarters
  • 1 white onion, halved
  • 2 garlic bulbs
  • 1 yellow zucchini, sliced
  • 1 green zucchini, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons dried basil
  • 1 teaspoon Italian seasonings
  • 1 teaspoon dried oregano
  • 2 1/2 cups boiling water
  • 1 cup milk or coconut milk
  • A handful of fresh basil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, sautéing until the onions are translucent.
  3. Add the carrots, red pepper, yellow zucchini, and green zucchini, cooking for 5-7 minutes.
  4. Stir in the roma tomatoes, dried basil, Italian seasonings, and dried oregano.
  5. Pour in the boiling water and season with salt and pepper.
  6. Let the soup simmer for about 20-30 minutes until the vegetables are tender.
  7. Remove from heat, stir in the milk or coconut milk, and blend until desired consistency.
  8. Serve hot, garnished with fresh basil.

Notes

Feel free to swap vegetables for those in season, or add beans for extra protein.
