Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the carrots and celery, cooking for about 5 minutes.
  4. Add the zucchini and bell pepper, and cook for another 5 minutes.
  5. Pour in the diced tomatoes and vegetable broth.
  6. Add the dried basil, oregano, salt, and pepper.
  7. Bring the soup to a boil, then reduce heat and let it simmer for about 20-30 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot and garnish with fresh parsley.

Notes

For a creamier texture, blend a portion of the soup before serving. Adjust the seasoning to taste.
