- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the carrots and celery, cooking for about 5 minutes.
- Add the zucchini and bell pepper, and cook for another 5 minutes.
- Pour in the diced tomatoes and vegetable broth.
- Add the dried basil, oregano, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for about 20-30 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot and garnish with fresh parsley.
Notes
For a creamier texture, blend a portion of the soup before serving. Adjust the seasoning to taste.
