Description

- 1 (15.25 ounce) package white cake mix
- 1 (8 ounce) can crushed pineapple with juice
- 2 cups white sugar
- 1 (8 ounce) package cream cheese, room temperature
- ½ cup butter, softened
- 4 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (or per cake mix directions). Grease a 9×13-inch pan or line with parchment paper.
- Prepare the white cake mix according to package instructions. Pour into the prepared pan and bake until a toothpick comes out clean (25–30 minutes).
- While cake bakes, combine crushed pineapple (with juice) and sugar in a saucepan. Bring to a boil and simmer for 2–3 minutes until slightly thickened.
- Let the baked cake cool for 10–15 minutes. Poke holes all over the surface with a fork or skewer. Pour hot pineapple glaze evenly over the warm cake.
- In a large bowl, beat softened cream cheese and butter until smooth. Gradually add confectioners’ sugar, then vanilla. Fold in chopped pecans.
- Once the cake is fully cooled, spread cream cheese frosting evenly over the top. Decorate as desired and serve!

- Let the cake cool completely before frosting to avoid melting.
- Use fresh pineapple for extra texture and less sugar.
- Replace half the sugar with stevia blend for a lower sugar version.
