Ingredients

- 2 lbs lamb shoulder, cut into chunks
- 4 carrots, sliced
- 3 potatoes, diced
- 2 onions, chopped
- 3 cloves garlic, minced
- 4 cups beef or lamb broth
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Season the lamb with salt and pepper, then brown it in the pot on all sides. Remove and set aside.
- In the same pot, add onions and garlic, cooking until softened.
- Add carrots and potatoes, stir to combine.
- Return the lamb to the pot.
- Pour in the broth.
- Add thyme and rosemary, stir well.
- Bring to a boil, then reduce heat to low, cover, and let simmer for about 120-180 minutes, or until the lamb is tender.
- Adjust seasoning to taste before serving. Enjoy your hearty stew!
