Description

A rich and comforting lamb stew, perfect for chilly evenings, bringing together tender meat and fresh vegetables.


Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 4 cups beef or lamb broth
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the lamb with salt and pepper, then brown it in the pot on all sides. Remove and set aside.
  3. In the same pot, add onions and garlic, cooking until softened.
  4. Add carrots and potatoes, stir to combine.
  5. Return the lamb to the pot.
  6. Pour in the broth.
  7. Add thyme and rosemary, stir well.
  8. Bring to a boil, then reduce heat to low, cover, and let simmer for about 120-180 minutes, or until the lamb is tender.
  9. Adjust seasoning to taste before serving. Enjoy your hearty stew!
