Ingredients

- 2 medium spring onion whites, chopped
- 5–6 cloves of garlic, minced
- 2–3 celery stems, chopped
- 1 medium carrot, diced
- 4–5 mushrooms, sliced
- Handful of cabbage, chopped
- 2 spring onion greens, chopped for garnish
- 100 grams chicken breast, diced
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 egg white
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped spring onion whites, garlic, celery, and carrot. Sauté until softened.
- Stir in chopped mushrooms and cabbage, cooking for an additional 2-3 minutes.
- Add diced chicken breast to the pot and cook until lightly browned.
- Pour in enough water to cover the ingredients, and add light and dark soy sauces.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- In the last few minutes of cooking, stir in the egg white until cooked through.
- Serve hot and enjoy your fat-burning soup!
Notes
For added flavor, consider adding a splash of lemon juice or fresh herbs before serving. This soup keeps well in the refrigerator for up to three days; freeze portions for quick meals later.
