Description

A festive ice cream cake layered with cookies-and-cream and vanilla ice cream, topped with crushed Oreos, perfect for celebrations.

Ingredients

Scale
  • 1 cup flour
  • 3/4 cup sugar
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 tsp vanilla extract
  • 1/2 cup hot water
  • 1.5 quarts cookies-and-cream ice cream
  • 1.5 quarts vanilla ice cream
  • 15 Oreo cookies (crushed)
  • 1.5 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Optional: 10 crushed Oreos (for garnish)

Instructions

  1. Preheat your oven to 350°F and prepare a 9-inch springform pan by lining it with plastic wrap.
  2. In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the egg, milk, oil, and vanilla extract until combined.
  4. Combine the wet and dry ingredients, then stir in the hot water for a smooth batter.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes. Allow it to cool completely before leveling.
  6. Mix the vanilla ice cream with crushed Oreos in a large bowl.
  7. Line a clean pan with plastic wrap. Add the cooled cake at the bottom, then spread the cookies-and-cream ice cream on top.
  8. Freeze the cake for 2 hours until the ice cream sets.
  9. Carefully add the Oreo-vanilla ice cream layer on top and freeze for another 4 hours.
  10. Whip the heavy cream, powdered sugar, and vanilla extract until you form soft peaks.
  11. Frost the top of the cake with the whipped cream, using any extra to garnish with crushed Oreos.
  12. Freeze the entire cake for an additional 30 minutes before serving.
  13. Serve on a cake stand accompanied by fresh strawberries and a glass of milk.

Notes

For best results, ensure each layer of ice cream freezes solidly before adding the next. Experiment with different ice cream flavors to keep things exciting.
