- 8 oz penne pasta
- 6 oz feta cheese, crumbled
- 1 cup dried cranberries
- 2 cups baby spinach or mixed greens
- 1/4 cup orange juice
- 1/4 cup olive oil
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Cook the penne pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked penne, feta cheese, dried cranberries, and baby spinach.
- In a small bowl, whisk together orange juice, olive oil, honey, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
For a richer taste, use higher-quality feta. You can also substitute dried cranberries with other dried fruits for a twist.
