A vibrant and refreshing salad combining orzo, feta cheese, cherry tomatoes, olives, and fresh herbs, perfect for any occasion.
Ingredients

- 1/3 cup olive oil
- 1.5 lemons, juiced
- 2 garlic cloves, minced or grated
- 1/4 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- 12 oz orzo
- 1.5 cups cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and sliced
- 1.25 cups feta cheese, crumbled
- 1 cup chickpeas, canned, rinsed and drained
- 1/2 red onion, thinly sliced
- 1/2 cup cucumber, diced
- 4 tbsp parsley, fresh, chopped
Instructions
- Boil water in a large pot, then add salt and orzo. Cook until al dente, following package instructions.
- While the orzo cooks, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper in a bowl.
- Drain the orzo, then rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked orzo, halved cherry tomatoes, sliced olives, crumbled feta, chickpeas, red onion, diced cucumber, and parsley.
- Pour the dressing over the salad and toss gently until well combined.
- Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld together.
Notes
Allow the salad to rest for a while before serving to enhance flavor development.
