Feta Mediterranean Orzo Salad

Description

A vibrant and refreshing salad combining orzo, feta cheese, cherry tomatoes, olives, and fresh herbs, perfect for any occasion.


Ingredients

  • 1/3 cup olive oil
  • 1.5 lemons, juiced
  • 2 garlic cloves, minced or grated
  • 1/4 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 12 oz orzo
  • 1.5 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and sliced
  • 1.25 cups feta cheese, crumbled
  • 1 cup chickpeas, canned, rinsed and drained
  • 1/2 red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 4 tbsp parsley, fresh, chopped

Instructions

  1. Boil water in a large pot, then add salt and orzo. Cook until al dente, following package instructions.
  2. While the orzo cooks, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper in a bowl.
  3. Drain the orzo, then rinse under cold water to stop the cooking process.
  4. In a large bowl, combine the cooked orzo, halved cherry tomatoes, sliced olives, crumbled feta, chickpeas, red onion, diced cucumber, and parsley.
  5. Pour the dressing over the salad and toss gently until well combined.
  6. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld together.

Notes

Allow the salad to rest for a while before serving to enhance flavor development.
