  • 1/2 cup plain yogurt (120 ml)
  • 2 tbsp mayonnaise (30 ml)
  • 1 tbsp lime juice (15 ml)
  • 12 chipotle peppers in adobo sauce, finely chopped

  • 1/2 cup diced tomatoes (about 75 g)
  • 1/4 cup chopped cilantro (about 15 g)
  • 1/4 cup crumbled goat cheese (about 30 g)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Rub the spice mixture evenly over the venison steak.
  4. Place the venison steak on the grill and cook for 4-5 minutes per side or until desired doneness.
  5. Remove the steak from the grill and let it rest for 5 minutes.
  6. While the steak is resting, prepare the Creamy Chipotle Drizzle.
  7. In a bowl, mix sour cream, mayonnaise, lime juice, chopped chipotle peppers, and garlic powder until smooth.
  8. Slice the rested venison steak thinly across the grain.
  9. Warm the corn tortillas on the grill for 30 seconds on each side.
  10. Assemble the tacos by placing sliced venison on each tortilla.
  11. Top with shredded lettuce, diced tomatoes, chopped cilantro, and crumbled queso fresco.
  12. Drizzle the Creamy Chipotle sauce over the assembled tacos.
  13. Serve immediately and enjoy.

Notes

  • Consider using Greek yogurt instead of plain yogurt in the Creamy Chipotle Drizzle for a healthier alternative.
  • Add a touch of fresh lime juice over the tacos to enhance the flavors.
  • Experiment with various cheeses like queso fresco or cotija to give a unique twist to the toppings.
