- 8 small corn tortillas
- For the Creamy Chipotle Drizzle:
- 1/2 cup plain yogurt (120 ml)
- 2 tbsp mayonnaise (30 ml)
- 1 tbsp lime juice (15 ml)
- 1–2 chipotle peppers in adobo sauce, finely chopped
- 1/2 tsp garlic powder (2.5 g)
- Toppings:
- 1 cup shredded lettuce (about 50 g)
- 1/2 cup diced tomatoes (about 75 g)
- 1/4 cup chopped cilantro (about 15 g)
- 1/4 cup crumbled goat cheese (about 30 g)
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, combine olive oil, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Rub the spice mixture evenly over the venison steak.
- Place the venison steak on the grill and cook for 4-5 minutes per side or until desired doneness.
- Remove the steak from the grill and let it rest for 5 minutes.
- While the steak is resting, prepare the Creamy Chipotle Drizzle.
- In a bowl, mix sour cream, mayonnaise, lime juice, chopped chipotle peppers, and garlic powder until smooth.
- Slice the rested venison steak thinly across the grain.
- Warm the corn tortillas on the grill for 30 seconds on each side.
