A quick and easy creamy Cajun chicken pasta recipe made with just five ingredients, ready in 30 minutes.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced or cubed
  • 1 tablespoon Cajun seasoning blend
  • 8 ounces fettuccine or preferred pasta
  • 1 cup heavy cream or half-and-half
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions, typically for 8-12 minutes, until al dente. Drain and set aside, reserving a small amount of cooking liquid.
  2. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the chicken and sprinkle with Cajun seasoning. Cook until the chicken is fully cooked and no longer pink, about 6-8 minutes.
  3. Reduce heat to medium-low and pour in the heavy cream. Whisk in the Parmesan cheese until the sauce is smooth and creamy. Simmer for a few minutes until the sauce thickens.
  4. Add the cooked pasta to the skillet and toss until evenly coated with the sauce. If too thick, add reserved pasta cooking liquid to thin out the sauce.

Notes

For best results, use freshly grated Parmesan cheese and consider experimenting with different pasta shapes. Leftovers can be stored in an airtight container for up to three days.
