Description

Refreshing cucumber salad sandwiches filled with creamy cream cheese and fresh herbs, perfect for summer picnics.


Ingredients

  • 2 Cucumbers
  • 8 oz Cream cheese
  • 8 slices Whole wheat bread
  • 2 tbsp Fresh dill or parsley
  • Salt and pepper to taste
  • 1 tbsp Lemon juice

Instructions

  1. Peel the cucumbers and slice them thinly.
  2. Combine cream cheese, chopped fresh dill, salt, pepper, and lemon juice in a bowl.
  3. Spread the cream cheese mixture generously on one side of each slice of bread.
  4. Layer the cucumber slices on top of the cream cheese on half of the bread slices.
  5. Top with the remaining slices of bread, cream cheese side down.
  6. Cut the sandwiches into quarters and serve immediately.

Notes

For extra flavor, consider adding a pinch of garlic powder or onion powder to the cream cheese mixture.
