Ingredients

  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (optional, such as basil or thyme)

Instructions

  1. Preheat the grill to medium heat.
  2. In a large bowl, combine the sliced zucchini, chopped bell pepper, sliced red onion, and cherry tomatoes.
  3. Drizzle with olive oil and sprinkle garlic powder, salt, and pepper. Toss to coat.
  4. Place the vegetable mixture in the center of a large piece of aluminum foil.
  5. Fold the foil into a packet and seal it tightly.
  6. Place the packet on the grill and cook for about 15-20 minutes, or until the vegetables are tender.
  7. Carefully open the packet (watch out for steam) and sprinkle with fresh herbs if desired.
