- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs (optional, such as basil or thyme)
Instructions
- Preheat the grill to medium heat.
- In a large bowl, combine the sliced zucchini, chopped bell pepper, sliced red onion, and cherry tomatoes.
- Drizzle with olive oil and sprinkle garlic powder, salt, and pepper. Toss to coat.
- Place the vegetable mixture in the center of a large piece of aluminum foil.
- Fold the foil into a packet and seal it tightly.
- Place the packet on the grill and cook for about 15-20 minutes, or until the vegetables are tender.
- Carefully open the packet (watch out for steam) and sprinkle with fresh herbs if desired.
- Serve warm as a side dish.
