Ingredients

  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest (optional)
  • ¼ cup all-purpose flour (fluffed, spooned, and leveled)
  • ¼ teaspoon baking powder
  • ½ teaspoon white vinegar (or lemon juice)
  • 2 tablespoons granulated sugar
  • Neutral oil (for cooking)
  • Sweetened whipped cream
  • Assorted berries
  • Powdered sugar
  • Maple syrup
  • ½ cup heavy cream (cold)
  • 1 tablespoon granulated sugar (to taste)
  • ½ teaspoon vanilla

Instructions

  1. In a mixing bowl, whisk the egg yolks, milk, vanilla extract, and lemon zest until combined.
  2. In a separate bowl, sift together the flour, baking powder, and sugar.
  3. <li Gradually incorporate the dry mixture into the wet mixture without overmixing.

  4. In another bowl, whip the egg whites until soft peaks form, adding vinegar as you whip.
  5. Gently fold the egg whites into the batter to keep it light and fluffy.
  6. Preheat a non-stick pan over low heat and lightly grease it with neutral oil.
  7. Spoon the batter into prepared molds and cover the pan with a lid to help the pancakes puff up.
  8. Cook for about 3-4 minutes on one side before flipping to cook for another 3-4 minutes.
  9. Once golden and fluffy, stack the pancakes on a plate.
  10. For optional whipped cream, whisk together cold heavy cream, granulated sugar, and vanilla extract until soft peaks form.
  11. Serve pancakes warm, topped with sweetened whipped cream, assorted berries, powdered sugar, and maple syrup.
