- 8 oz. (227 g) cheddar cheese
- 1 yellow onion

- 1 lb. (454 g) cooked beef
- 12 large eggs
- 8 large flour tortillas
Instructions
- Start by getting all the components for the breakfast burritos ready. Grate the cheddar if it hasn’t been bought pre-grated.
- Chop the onion and bell pepper. Place them in a large frying pan with ½ tablespoon of vegetable oil and cook over medium heat until the onion becomes soft and see-through, roughly 5 minutes. Add a touch of salt and pepper to taste. Move the onion and bell pepper to a bowl.
- Cut the cooked beef into small pieces, then add it to the pan with another ½ tablespoon of oil. Cook the beef over medium heat until it turns brown, about 5 minutes. Transfer the beef to a different bowl and clean the pan.
- Crack open 12 eggs into a bowl and give them a light whisk. Add the remaining tablespoon of oil to the pan and warm it over medium heat. When the pan is hot, spread the oil over the surface and pour in the whisked eggs.
- Gently move the eggs toward the center as they begin to solidify at the bottom, continuing until most of the eggs are set but still appear moist. Avoid overcooking to prevent dryness. Add a touch of salt and pepper to season the eggs.
- To put together the burritos, place a portion of scrambled eggs in the center of each tortilla, followed by some cooked onion and bell pepper, a sprinkle of cheese, and a portion of beef.
- To wrap the burritos, first fold the bottom of the tortilla up, then tuck in the sides, and continue rolling until fully closed. Wrap each burrito in parchment paper using the same method: bottom up, sides in, and roll up completely. Mark each burrito on the parchment or tape.
- Put the wrapped burritos into freezer bags, label and date them, and then store them in the freezer.
- Move a breakfast burrito to the fridge a day in advance to defrost. Once thawed, heat in the microwave on high for 1-2 minutes, or cook in a skillet over medium-low heat for about 5 minutes per side, until the tortilla is crisp and the inside is warm.
- To warm directly from frozen, use the microwave’s defrost mode for about 5 minutes, then heat on high for 1-2 minutes until fully warmed.
