- 2 lbs beef short ribs
- 3 large yellow onions, thinly sliced
- 6 cups beef broth (preferably homemade)
- 2 tsp fresh thyme leaves
- 2 bay leaves
- 4 slices sourdough bread
- 1 cup Gruyère cheese, shredded
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions. Cook for about 30 minutes until they turn golden brown.
- Push the onions aside and add the beef short ribs. Sear until browned on all sides, about 5-7 minutes.
- Pour in the beef broth and add the thyme and bay leaves. Bring the mixture to a gentle boil.
- Reduce the heat and let it simmer uncovered for about 2 hours.
- Preheat the oven to 350°F (175°C). Ladle the soup into oven-safe bowls. Top with slices of sourdough bread and sprinkle with the Gruyère cheese. Bake for 15-20 minutes until bubbly.
Notes
Enjoy with a crisp garden salad or roasted vegetables. Store leftovers in airtight containers for up to three days.
